Here is one of my forgotten cheat meals! This is a reminder not to forget to give yourself a chance to let loose (within reason). Even when I’m cheating I try to keep things in control. Fried chicken from the chicken spot, curly fries, and a side salad that I made at home, that’s it! Simple! The salad was left over from my chickpea and cashew meal prep.
Warm chickpea & cashew salad
This salad was made during a week when I didn’t do my traditional meal prep because it was WAY too hot and I didn’t feel like cooking. So here is my favorite salad to date:
- Baby kale
- Arugula
- Sautéed chickpeas with peppers
- Cashews
- Parmesan cheese.
I’ve also been making it a habit to make my own salad dressings. On the side: lemon juice, olive oil, salt + pepper. This meal is also #vegan (minus the cheese) and #vegetarian friendly.
